No Bake Blackberry Lime Cheesecakes

Ingredients

Blackberry Swirl

  • 6 ounces fresh blackberries

  • 2 tablespoons granulated sugar

Cheesecake Filling

  • 16 ounces cream cheese, softened

  • 1 cup powdered sugar

  • 1 teaspoon vanilla bean paste

  • 1 tablespoon fresh lime juice

  • Zest of 1 lime

  • ⅓ cup sour cream

  • 1½ cups heavy cream

Assembly

  • 2 cups gluten free graham cracker crumbs

  • 6 fresh blackberries, for garnish

Instructions

  1. In a small bowl, combine the blackberries and granulated sugar. Lightly mash with a fork and let stand for 10 to 15 minutes to macerate.

  2. In the bowl of a stand mixer, beat the cream cheese and powdered sugar until completely smooth.

  3. Add the vanilla bean paste, lime juice, lime zest, and sour cream. Mix until fully combined.

  4. In a separate bowl, whip the heavy cream to medium peaks.

  5. Gently fold the whipped cream into the cream cheese mixture until smooth and fully incorporated.

  6. Fold the blackberry mixture into the cheesecake filling just enough to create ribbons of blackberry throughout the filling. Do not fully mix.

  7. Spoon about 2 tablespoons of gluten free graham cracker crumbs into the bottom of each of six serving dishes and gently press into an even layer.

  8. Spoon or pipe the cheesecake filling over the graham cracker crumbs.

  9. Refrigerate for at least 1 hour before serving.

  10. Garnish each cheesecake with a fresh blackberry before serving.
