Homemade Gluten Free Graham Crackers

Once you've tasted homemade graham crackers, it's hard to go back to the store bought version. These Gluten Free Graham Crackers are lightly sweet, perfectly crisp, and packed with warm cinnamon and molasses flavor. Made with a simple blend of gluten free flours, they bake into golden crackers that are delicious on their own, paired with seed butter, crumbled into pie crusts, or layered into classic s'mores. Best of all, they are easy to make and can be made dairy free with a simple swap.

Ingredients

  • 100 g white rice flour

  • 100 g brown rice flour

  • 80 g tapioca starch

  • 100 g granulated sugar

  • ½ teaspoon baking powder

  • ½ teaspoon kosher salt

  • 1 teaspoon cinnamon

  • 1 tablespoon flaxseed meal

  • 3 tablespoons hot water

  • 3 tablespoons whole milk (or dairy free milk)

  • 1 teaspoon vanilla extract

  • 1 tablespoon molasses

  • 85 g unsalted butter, melted (or dairy free butter alternative, melted)

Instructions

  1. In a large mixing bowl, whisk together the white rice flour, brown rice flour, tapioca starch, sugar, baking powder, salt, and cinnamon.

  2. In a small bowl, combine the flaxseed meal and hot water. Let sit for 5 minutes until thickened.

  3. Add the milk, vanilla extract, molasses, and melted butter to the flax mixture and stir until combined.

  4. Pour the wet ingredients into the dry ingredients and stir until a dough forms and no dry spots remain.

  5. Divide the dough in half.

  6. Place one portion of dough between two sheets of parchment paper and roll to a thickness between ⅛ and ¼ inch.

  7. Dock the dough using a dough docker or pierce thoroughly with a fork across the entire surface.

  8. Use a pizza cutter or sharp knife to cut the dough into 2 x 2 inch squares. Do not separate the crackers.

  9. Transfer the parchment paper and dough to a baking sheet.

  10. Repeat with the remaining dough.

  11. Bake at 300°F for 20 to 30 minutes, or until the crackers are lightly browned and crisp.

  12. Allow the crackers to cool completely on the baking sheet.

  13. Break apart along the scored lines and store in an airtight container.
