Spiced Plum Jam
Late summer plums are deeply fragrant, softly tart, and naturally rich, making them ideal for preserving. This spiced plum jam feels classic and grounding, perfect for toast, yogurt, or tucked into baked goods as the season begins to shift.
Ingredients
4 cups plums, diced
2 cups brown sugar
2 tablespoons lemon juice
½ teaspoon cinnamon
4 whole cloves
Instructions
Combine the plums, brown sugar, lemon juice, cinnamon, and cloves in a heavy bottomed saucepan.
Place over low heat and bring to a gentle simmer, stirring occasionally.
Continue to simmer on low for about 2 hours, stirring periodically, until thickened and glossy.
Remove from heat and discard the whole cloves.
Spoon the jam into clean jars.
Cool completely, then store covered in the refrigerator.
Notes
This jam thickens more as it cools.
For a smoother texture, lightly mash the plums during cooking.
