Gluten Free Sugar Cookies
These Gluten Free Sugar Cookies are soft, tender, and packed with rich vanilla flavor in every bite. Dry Ingredients
8.75 ounces white rice flour
2.2 ounces brown rice flour
0.85 ounce tapioca starch
9.5 ounces granulated sugar
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon xanthan gum
½ teaspoon salt
Wet Ingredients
8 tablespoons unsalted butter, melted and hot (or dairy free butter alternative)
3 ounces cream cheese, softened (or dairy free cream cheese)
1 tablespoon ground flaxseed mixed with 2½ tablespoons water (or 1 teaspoon psyllium husk powder mixed with 2½ tablespoons water)
1 tablespoon vanilla bean paste
Instructions
In a small bowl, combine the ground flaxseed and water. Let stand for 5 to 10 minutes until thickened. If using psyllium husk powder, combine it with the water and allow it to hydrate for several minutes.
In a large bowl, whisk together the white rice flour, brown rice flour, tapioca starch, granulated sugar, baking powder, baking soda, xanthan gum, and salt.
In a separate mixing bowl, whisk together the hot melted butter, cream cheese, and vanilla bean paste until smooth.
Stir in the prepared flax egg or psyllium mixture until fully combined.
Add the dry ingredients to the wet ingredients and mix until a soft dough forms.
Scoop the dough into 1 tablespoon portions and place on a parchment lined baking sheet.
Refrigerate the cookie dough for 30 minutes.
Preheat the oven to 350°F.
Bake for 10 to 12 minutes, or until the edges are just set and the centers remain soft.
Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Frost and decorate as desired.
