Chocolate Chip Cookies

Ingredients
1 cup (2 sticks) unsalted butter
1 cup brown sugar, packed
½ cup granulated sugar
2 tablespoons flaxseed meal
5 tablespoons warm water
2 teaspoons vanilla extract
2 cups white rice flour
1 cup brown rice flour
½ cup tapioca starch
¼ cup cornstarch
1 teaspoon xanthan gum
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
2 cups chocolate chips
Instructions
In a small bowl, combine the flaxseed meal and warm water. Let sit for 5 to 10 minutes until thickened.
In a large mixing bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
Add the flax mixture and vanilla extract and mix until fully incorporated.
In a separate bowl, whisk together the white rice flour, brown rice flour, tapioca starch, cornstarch, xanthan gum, baking soda, baking powder, and salt.
Gradually add the dry ingredients to the wet ingredients and mix until a dough forms.
Fold in the chocolate chips until evenly distributed throughout the dough.
Cover and refrigerate the dough for 1 hour.
Preheat the oven to 350°F. Line baking sheets with parchment paper.
Scoop the dough into large balls, about ¼ cup each, and roll gently. Place 6 cookies per baking sheet.
Bake for 7 minutes. Remove the baking sheet from the oven and gently flatten each cookie.
Return to the oven and bake for an additional 6 minutes, or until the edges are set and the centers are still slightly soft.
Let the cookies cool on the baking sheet for 10 minutes before transferring to a wire rack to cool completely.
